Father's Day Recap

Because it was Corey's 1st Father's Day, Cooper and I decided to make a really big deal out of the day!!! We woke Corey up bright and early with a cup of coffee and his cards and gifts. We got him a coffee mug that is covered with Cooper pictures so he can show off the proud Daddy that he is, a canvas for his office that has Cooper's feet and hand prints and a card from Cooper that said that Daddy's last present/toy was in the driveway...Corey absolutely hates mowing the yard and complains about it every week. I had looked into a lawn service but they are extremely expensive - what I paid for the mower would have only covered a 6 month contract with a lawn service. Ridiculous!!! So, I figured a riding mower would cut the mowing time in half and it could be Corey and Cooper's new toy. I am sure Cooper will love riding the mower with his Daddy next summer when he is a little bigger!

I made Corey biscuits and sausage gravy for brunch - his favorite. Corey relaxed and watched the Mets game all afternoon and read his riding mower owner's manual. We headed to Sears later that evening to buy mulching blades and to look at additional attachments for the new mower. When we got back home I made Corey an awesome dinner - Seasoned Sirloin Kabobs.

Here is a picture of my colorful and delicious kabobs! This was the first time I had ever used the grill...Corey was very nervous - but everything turned out great!
It was a wonderful day!! Cooper and I really enjoyed surprising and spoiling Corey and I think Corey really enjoyed his 1st Father's Day!!!!

Here is the recipe for the yummy kabobs...
Ingredients
1/4 cup soy sauce
3 tablespoons light brown sugar
3 tablespoons distilled white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon garlic pepper seasoning
4 fluid ounces lemon-lime flavored carbonated beverage
2 pounds beef sirloin steak, cut into 1-1/2 inch cubes
2 green bell peppers, cut into 2 inch pieces
skewers
1/2 pound fresh mushrooms, stems removed
1 pint cherry tomatoes
1 fresh pineapple - peeled, cored and cubed

Cooking Instructions
In a medium bowl, mix soy sauce, light brown sugar, distilled white vinegar, garlic powder, seasoned salt, garlic pepper seasoning, and lemon-lime flavored carbonated beverage. Reserve about 1/2 cup of this marinade for basting. Place steak in a large resealable plastic bag. Cover with the remaining marinade, and seal. Refrigerate for 8 hours, or overnight.
Bring a saucepan of water to a boil. Add green peppers, and cook for 1 minute, just to blanch. Drain, and set aside.
Preheat grill for high heat. Thread steak, green peppers, mushrooms, tomatoes, and pineapple onto skewers in an alternating fashion. Discard marinade and the bag.
Lightly oil the grill grate. Cook kabobs on the prepared grill for 10 minutes, or to desired doneness. Baste frequently with reserved marinade during the last 5 minutes of cooking.
